Best Way to make hard boiled eggs

For anyone that may not know, the BEST way to make hard-boiled eggs is in the OVEN! Place the eggs in a muffin tray so they do not move around, turn the oven to 325 degrees, pop in for about 25-30 minutes and remove! Not only are they tastier, but they also are much easier to peel!" or here is another tip about eggs if you want to boil them...

“Do you know how to boil an egg?”

I laughed at her, thinking how I had admired her so much for being such a great, put together first-time mom and halfway decent cook… but really? You don’t know how to boil an egg?
As I started to explain to her the concept of getting a pot, filling it with water, putting the eggs in the pot, my smugness started to wear off. Wait a minute. How long did you boil the water for? Do you put them in with the water cold or hot?

OMG, did I know how to boil an egg?

I realized that while I had the basic mechanics of how to do it, the subtle nuances that create a gorgeous creamy hard boiled egg were eluding me. In fact, I was boiling eggs and getting anywhere from perfectly done, to overdone, with that yucky gray ring around the yolk.
Science Lesson – That gray ring around the yolk is actually the iron in the egg yolk reacting with the hydrogen sulfide from the white… and only happens when you over cook it.
So with a gazillion eggs from our backyard chickens in hand, I set out to boil the perfect egg.
And I was pretty surprised at what I learned.
1) It is actually as easy as you think it should be. Provided you pay attention… I tend to suck at paying attention to things so I had some pretty gross attempts.
2) We have the luxury of using really really fresh eggs… like, right from the chicken. But those aren’t really the eggs that you want. The fresher they are? The harder they are to peel once they are cooked. So if you want to get really easy to peel eggs? Use some that are a little bit older. This is probably not going to be a problem for the average consumer, since most of the eggs that you buy in the store have been there for a while. But, just in case you ever get chickens…

Now the directions -

1) Grab your eggs (I’m using large eggs), and a pot. Pretty easy start, right?
2) Put the eggs in the pot and cover them with water, only about an inch overhead.
3) Put them on the stove and turn it on medium high heat.
Now this is where you NEED to pay attention.
4) As SOON as that water starts to boil (and I mean boil, not just a few bubble here and there), turn the stove off.
5) Set the timer for 10 minutes.
6) When the timer goes off, remove the eggs from the pot and put them in cold water. (Sometimes I put them in an ice bath, but I haven’t found that it really matters either way)
7) Let them sit for about 5 minutes and then dig in.
Of course, if you don’t want them right away, just store them in the fridge, but try to use them within a few days as they go bad faster than uncooked eggs.

Now tell me that wasn’t the SIMPLEST, most STUPID PROOF way to boil an egg?

Vaginal Pain....

Yes I said the V word LOL I would like to share this with other women because I think it's something that is not talked about enough due to women being embarrased etc.

Well lemme start off by saying I was experiencing pain and I had no idea why. Many of the GYN's told me they were cysts or they couldn't find anything wrong...well obviously there was something really wrong and NO ONE could give me answers. After a few years of research I finally found out that many GYN clinics deal with vaginal pain, if for some reason they do not then find a GYN that specializes in vaginal pain because there are apparently doctors that do.

Now to tell you my story. Like I said I have been dealing with pain and I thought it was cyst, then I thought the pain was on my cervix, then I thought the pain was on my ovaries. After I saw a gyn that specialized in vaginal pain at the clinic things started to make sense and boy was it a relief. As she examined me I could tell she knew what she was doing, thank GOD! LOL and this is all it was that was causing extremely bad pain. The vaginal wall is stacked like 3 thick rubberbands and the walls should be soft. Also, keep in mind these rubberband like walls are muscles and guess what happens when your muscles tighten...it hurts like crap and that my friends is what I have just a few tight muscles that need to be stretched. She did say someone like me should have physical therapy but she said since I do not have insurance that she will give me a few stretches to do at home to see if it fixes the problem or even helps. So I get home and do butterfly stretches, hamstring stretches..all kinds of stretches that stretch that area out. Now I am not in really in pain as I use to be. So there you have it...your vagina is a muscle and just like all muscles they do need to be stretched.

Writer's Block

I get so many great ideas of what to write about when I am in the shower or in the car and by the time I sit down at a computer that huge block sets in. UGGHHH it makes me so frustrated because there is really great information I want to share but can't. Well this is my real first attempt to put this in writing so I am sure I will eventually get the hang of it!

Introduction...

Well I have been thinking for so long about writing a special blog spot about all the things in our lives. Inspired by Carrie Bradshaw from "Sex and the City". LOL I know I know it sounds silly but there are so many things that I believe no one was to say out loud and here I will do that. Talking about things from dealing with death, parents, spouses, family, finances, crazy ideas we get and so much more. Make sure you check in every now and then to see whats new in "The life as we know it"

Steak Chili

Steak Chili

Yields 6 servings
INGREDIENTS:
  • 1 1/2 pounds stew meat, diced into 3/4-inch cubes
  • Kosher salt and freshly ground black pepper, to taste
  • 1 red onion, diced
  • 4 cloves garlic, minced
  • 1-3 jalapeños, minced
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (8-ounce) can tomato sauce
  • 2 tablespoons chili powder
  • 2 (15-ounce) cans kidney beans, drained and rinsed
  • Shredded jalapeño Monterey Jack cheese, for serving
  • Jalapeño cornbread, for serving
DIRECTIONS:
Season stew meat with salt and pepper, to taste.
Heat olive oil in a Dutch oven or large pot over medium high heat. Add stew meat and sear until browned, about 2 minutes. Add onion, garlic and jalapeños, and cook until fragrant, about 1-2 minutes. Stir in diced tomatoes, tomato sauce, chili powder, kidney beans and 1-2 cups water, making sure to cover most of the ingredients.
Reduce heat to low; simmer, covered, stirring occasionally, until meat is tender, about 90-120 minutes.
Serve immediately with jalapeño Monterey Jack cheese and cornbread, if desired.

Homemade Chocolate Eclair Cake


Eclair Cake
This no-bake eclair cake layered with graham crackers, Cool Whip & vanilla pudding is frosted with homemade chocolate icing. Also called ice box cake, it's a perfect birthday cake or easy dessert!

Eclair Cake Recipe
  • 1 box graham crackers
  • 2 packages (3 ounce each) vanilla instant pudding
  • 3 cups milk
  • 1 cup Cool Whip whipped topping, thawed
  • 4 Tablespoons butter, softened
  • 5 Tablespoons cocoa
  • 4 teaspoons light corn syrup
  • 1 1/2 teaspoons vanilla
  • 1 1/2 cups confectioners' (powdered) sugar
  • 5 Tablespoons milk, more or less

How To Make Eclair Cake
  • Place 1/3 of the graham crackers on the bottom of a 9 X 13 inch baking pan or rectangular casserole dish.
  • In a large bowl, mix pudding and milk for 2 minutes on medium speed. Scrape bowl.
  • Fold Cool Whip into pudding, being careful not to mix too much.
  • Spread 1/2 the pudding mixture on top of the graham crackers and smooth with an offset spatula.
  • Layer another 1/3 of the graham crackers on top of the pudding, pressing lightly.
  • Spread the last 1/2 of the pudding mixture on top, and repeat with the remaining graham crackers.Cover with plastic wrap and place in the refrigerator while making the frosting.
  • In a medium bowl with a hand mixer, beat butter and cocoa until well blended. Add corn syrup and vanilla and mix again. Add powdered sugar 1/2 cup at a time. Add milk 1 Tablespoon at a time as needed to make the frosting spreadable.
  • Remove cake from the fridge and spread frosting evenly over the top being careful not to break the graham crackers.
  • Refrigerate eclair cake at least 6 hours or overnight before cutting.
  • Serves 12-15.

Shepherd's Pie

I've never made Shepherd's Pie before today. I always seem to be missing one thing when I pull up a recipe for it, but tonight we received a bag of fresh potatoes from a friend's garden. I had a pound of ground beef in the freezer so Shepherd's Pie made sense for dinner. I knew the basics of a Shepherd's Pie...meat, veggies, gravy...mashed potato topping. I winged the details and this is what I created. I thought it turned out awesome, we ate on it for several days, so it stretches pretty well, and cheap to make!

This makes a great freezer meal. Just line your casserole with tinfoil and then saran wrap. Assemble the Shepherd's Pie like normal but instead of baking it, freeze it! To reheat, put the unwrapped frozen Shepherd's Pie back into the pan you froze it in, and let thaw in the fridge. Once thawed, bake as normal.

Shepherd's Pie

Ingredients

1lb lean ground beef
1 medium onion, chopped
2 cloves garlic, chopped
1/4 cup flour
1/4 cup heavy cream
4 Tbs butter
2 cups frozen mixed veggies (I used 1/2 cup green beans, 1/2 peas, 1/2 cup carrots, and 1/2 cup corn)
1 can of cream of mushroom
Salt and pepper to taste
3 cups of mashed potatoes (seasoned with butter and salt/pepper to taste)
1/2 cup cheddar cheese, shredded

Step 1  

 

Preheat oven to 350 degrees. In a skillet, brown the ground beef, onions, and garlic together.

Step 2

Once the meat is browned, add the flour, cream, and 4 Tbl butter. Stir to combine.

Step 3

Add the frozen vegetables, stir to incorporate. Cook for 5-10 minutes.

Step 4

Add the cream of mushroom soup. Stir to combine. Cook until heated through, season with salt and pepper.

Step 5

Pour the beef and veggie mixture into a greased casserole dish.

Step 6

Cover the beef and veggies with a thick layer of mashed potatoes. Sprinkle with cheddar cheese.

Step 7

Bake at 350 degrees for 15-20 minutes, until cheese is melted and bubbly.

Chicken Quesadillas

This is perfect for those grocery store rotisserie chickens. It's fast and delicious. 

This makes a great freezer meal: Prepare and bake as normal. Let cool and place the quesadillas on a baking sheet and freeze. Once frozen, wrap each one with saran wrap and place in a labeled Ziploc bag. To reheat: Unwrap frozen quesadilla and microwave for 2-3 minutes until heated through.

Chicken Quesadillas 

Ingredients

2 1/2 cups cubed cooked chicken
2/3 cup salsa
1/3 cup finely diced red onion
1 Tbs finely chopped garlic
1 tsp ground cumin
1/2 tsp dried oregano
1/2 tsp salt
Flour tortillas (between 8-10)
1/4 cup melted butter
8oz shredded Monterey Jack cheese
Sour cream for serving

Step 1

Preheat oven to 375 degrees. In a skillet, saute the onion and garlic in a little olive oil until softened. 

Step 2

Add the chicken to the garlic and onion. Stir to heat through.

Step 3

Add the salsa, cumin, oregano, and salt. Cook for 5-7 minutes. Set aside.

Step 4


Butter one side of the tortilla and flip over. Fill with 2 Tbs of chicken filling and sprinkle cheese over top. Fold the tortilla over and press down. Assemble the quesadillas on a baking sheet and bake at 375 degrees for 9-11 minutes until tortilla is lightly browned.

Step 5

Serve with sour cream, jalapenos, guacamole...whatever you want
