Pork Tenderloin With Sour Cream and Mushroom Sauce

Pork tenderloin is sliced and cooked with a tasty mushroom and sour cream sauce. This is an easy meal for any night of the week, and it's delicious with potatoes and corn, or serve with your favorite side vegetables.

Cook Time: 25 minutes

Total Time: 25 minutes

Yield: Serves 4

Ingredients:

  • 1 1/2 pounds pork tenderloin
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 2 cups sliced mushrooms
  • 1 bunch (6 to 8) green onions with about 2 to 3 inches of green sliced
  • salt and pepper, to taste
  • 1/3 cup dry white wine
  • 1 cup chicken broth, divided
  • 1 tablespoon flour
  • 1/2 cup sour cream
  • 1 tablespoon chopped fresh parsley

Preparation:

Slice tenderloins into about 8 pieces; flatten each medallian slightly with the heel of your hand. In a large skillet over medium heat, melt 1 tablespoon of butter with 1 tablespoon of oil. Cook mushrooms until tender, about 5 minutes, then add onion and cook for 1 minute longer. Transfer the mushrooms and onions to a plate; set aside. Pour off excess liquids from the pan. Melt remaining butter with oil over medium heat. Add pork tenderloin medallions and cook for about 3 minutes on each side, or until browned. Sprinkle the pork lightly with salt and pepper. Pour in wine and half of the chicken broth. Reduce heat to low, cover, and cook for 15 minutes. Transfer the pork to a serving dish and keep warm. Stir flour into the remaining chicken broth until smooth. With the skillet over medium heat, stir in the flour and broth mixture. Cook, stirring, until the sauce is thickened. Taste and add salt and pepper, as needed. Stir in the sour cream, parsley, and the cooked mushrooms and onions. Heat through, but do not boil. Serve sauce with the pork slices.

Crockpot Ham, Bean and Dumpling Soup

Ingredients:
-lima beans 1 or more packs depending on the number of ppl (1 pack feeds 4ppl medium sized bowls)
-water
-chicken bouillon cube
-bisquick or dumpling mix whatever you prefer, you can flavor you dumplings with garlic powder melted butter and parmasan cheese or just have them plain
-ham either from a ham steak or leftovers from a whole ham
-add spices to your taste...I add garlic powder, onion powder, salt and pepper
-you can add other items such as chopped onion, celery, carrots and potatoes but I prefer it to be just beans, ham and dumplings

How to make it:
-Soak lima beans over night or boil day of
-put beans and ham in crockpot
-cover completely with water and throw in chicken bouillon cube
-let simmer in crockpot on high for 4-5 hours, until the beans are cooked and the soup is bubbling
-at this time you may add your dumplings, the soup will thicken up as you add your dumplings in so if you need put more water in ...cook dumplings through and the soup is done

My daughter-in-law will be the gatekeeper for me
spending time with you and my grandchildren.

Mexican Chicken Alfredo

Ingredients

1lb spiral pasta, cooked
1lb cooked chicken (about 2-3 breasts), cubed
1 medium onion, chopped 
2 jars (15oz each) Alfredo sauce
1 cup grated Parmesan cheese
1 cup salsa
1/4 cup milk
1 Tbs taco seasoning


 Step 1

Layer the cooked pasta in a baking dish.

Step 2


In a bowl, combine the cooked chicken, onion, Alfredo sauce, Parmesan cheese, salsa, milk, taco seasoning, and salt/pepper to taste.

Step 3

Pour Alfredo mixture over the pasta, stir a little to incorporate the sauce and pasta. Cover with tinfoil and bake at 350 degrees for 40 minutes.
